Grilled Chicken and Lemon Salad
Ingredients for Chicken
  1. 3/4 cup fresh lemon juice
  2. 1/4 cup olive oil
  3. 1 tablespoon fresh thyme leaves
  4. 1 teaspoon salt
  5. 2 (6-ounce) skinless, boneless chicken breast halves
  6. Cooking spray or cooking oil
Ingredients for Salad
  1. 1 cup sugar snap peas, trimmed
  2. 1/2 cup red bell pepper strips
  3. 1/2 cup yellow bell pepper strips
  4. 1/2 cup (1/4-inch-thick) slices zucchini
  5. 2 tablespoons chopped fresh cilantro (optional)
  6. 1 tablespoon olive oil
  7. 1/4 teaspoon salt
  8. 1/4 teaspoon freshly ground black pepper
  9. 4 lemon wedges (optional)
  1. Combine the first 4 ingredients in a large zip-top plastic bag. Add chicken to bag, and seal. Marinate in the refrigerator 1 hour, turning occasionally.
  2. Prepare grill.
  3. Remove chicken from bag; discard marinade.
  4. Place chicken on a grill rack coated with cooking spray; grill 6 minutes on each side or until done.
  5. Cut into 1/4-inch-thick slices.
  1. Combine peas and next 7 ingredients (through black pepper) in a large bow
  2. Mix in the chicken strips.
  3. Serve with lemon slices if desired.
