Southwestern Chicken Burgers
Serves 4
  1. 1 lb. ground chicken (preferably dark meat or a mix of white and dark)
  2. 1/2 cup fine diced mushrooms
  3. 1/4 cup fine diced yellow onion
  4. 1/4 cup fine diced red bell pepper
  5. 2 tbsp minced fresh cilantro, optional
  6. 1/2 tsp sea salt
  7. 1/2 tsp garlic powder
  8. 1/4 tsp chili or cayenne powder
  9. 1/4 tsp freshly ground black pepper
  10. Bibb lettuce leaves
  11. Optional Toppings: sliced tomatoes, red onion, avocado, salsa or guacamole
  1. Preheat grill to medium-high heat. In a large bowl, add all of the ingredients. Use your hands (or a large fork) to mix together the ingredients until well combined.
  2. Shape into 4 patties. Place on hot grill and cook about 3 minutes per side, until cooked through.
  3. Serve with any of the optional toppings and use large bibb lettuce leaves instead of a bun.
