Herbed Turkey Burgers with Zucchini Buns
  1. 1 lb ground turkey meat
  2. 3 tablespoons fresh oregano, chopped
  3. 3 garlic cloves, minced
  4. thick slices of zucchini (or eggplant, summer squash, etc.)
  5. olive oil
  6. sea salt & fresh ground pepper to taste
  7. Toppings: thin sliced tomato, avocado, and lettuce or spinach
  8. Optional Toppings: mustard, dijon mustard, marinara sauce or guacamole
  1. In a large bowl, combine the turkey meat, oregano and garlic cloves, and mix with your hands until fully combined. Form into patties and set aside.
  2. Heat a grill to medium high heat.
  3. Coat the zucchini on both sides with olive oil and sprinkle with salt and pepper.
  4. Add the zucchini to the grill, cooking 2 – 3 minutes per side until you have nice grill marks and the zucchini still holds its shape.
  5. Also add the turkey burgers to the grill, cooking 3 – 5 minutes per side, until cooked.
  6. Serve between zucchini slices and add the tomato, avocado and lettuce/spinach and any other optional toppings you desired. Enjoy!
