Vampire Chicken Bake
  1. 4 Boneless skinless chicken thighs
  2. 1 c Peas
  3. 1 c Cauliflower
  4. 1 1/2 tbsp garlic (minced)
  5. 1 Chopped onion (small, about 3/4 c)
  6. 2 Beets (small, cubed (about 1 c)
  7. 1 tbsp Ghee Butter
  8. Sea salt and fresh cracked pepper (to taste)
  9. Drizzle of Extra Virgin Olive Oil
  1. Preheat oven to 350.
  2. Drizzle olive oil in a casserole dish. Add beets, peas, cauliflower, garlic, and onion, and mix well.
  3. Place the tbsp of ghee butter on top, and then add chicken thighs.
  4. Add salt and cracked pepper to taste.
  5. Cover, and bake for 45 minutes.
  6. Remove lid, and bake for an additional 15-20 minutes, or until chicken is browned.
