Slow Cooked BBQ Bacon Apple Chicken

Ingredients
  1. 4 boneless skinless chicken breasts (or thighs)
  2. 2 apples, peeled, cored and grated
  3. 1 cup homemade barbecue sauce (recipe below)
  4. 8 slices of bacon
  5. 1 teaspoon garlic powder
BBQ Sauce Ingredients
  1. 1 tbsp. unrefined coconut oil
  2. 1 cup minced fresh onion
  3. 1 tbsp. coconut aminos
  4. 3 cloves minced garlic
  5. 1 tsp. ground cumin
  6. 1 tsp. dry mustard
  7. 1/3 tsp. ground chipotle chili powder
  8. 1 tsp. dry basil
  9. 1 tsp. dry oregano
  10. 1 6oz. can tomato paste
  11. 1 1/4 cups beef broth
  12. 2 tbsp. apple cider vinegar
  13. 1/4 tsp. stevia
  14. 1 tbsp. raw honey
BBQ Sauce Instructions
  1. 1. Heat oil in a 1 quart saucepan over medium heat. Add onions and stir until tender, about 5 minutes. Add remaining ingredients and whisk until smooth. Bring to a low boil, cover, reduce heat, and simmer, stirring periodically until mixture thickens, 20 to 30 minutes.
  2. 2. Pour into sealable container and refrigerate. Use within 2 weeks or freeze.
Chicken Instructions
  1. Wrap each piece of chicken in 2 pieces of bacon and place in the bottom of a slow cooker.
  2. Mix grated apple and barbecue sauce and pour over the chicken.
  3. Cook on low for 6-8 hours or until completely cooked. Can also cook on high for 2-3 hours.
