Philly Cheesesteak Stuffed Peppers

Ingredients
  1. 1 Onion
  2. 2 Tablespoons Butter or Coconut Oil
  3. Vegan Mozzarella Cheese (see instructions below if making)
  4. 2 cups sliced button Mushrooms
  5. 4 Red, Yellow or Green Bell Peppers (Mix and match if you want!)
  6. 1 pound of Roast Beef (or ground beef or leftover steak or roast)
  7. Vegan Mozzarella Cheese Ingredients: (Ignore if you buy pre made vegan moz cheese)
  8. 2 tablespoon lemon juice
  9. 1/2 cup coconut milk, thick (or 1/4 cup if thin.)
  10. 1 cup coconut butter, softened (put the jar in a bowl of warm water)
  11. 3 tablespoons nutritional yeast
  12. 1 teaspoon unprocessed salt
  13. 1/2 teaspoon Vitamin-C crystals, optional, for a sharper cheese flavor.
  14. 1 clove fresh crushed garlic, optional.
  15. 2/3 cup coconut oil, melted
  16. A few tablespoons of olive oil if needed for blending
Instructions
  1. Vegan Mozzarella Cheese Instructions: (Ignore if you buy pre made vegan moz cheese)
  2. In any style blender, add lemon juice, coconut milk, coconut butter, nutritional yeast, salt, Vitamin C crystals, and optional garlic. Blend well.
  3. Add melted coconut oil last and blend briefly until smooth.
  4. Pour into a freezer-safe container and freeze. If you use a flat sandwich size container, it will freeze in 1 hour. Remove from freezer and allow to warm for 2-5 minutes. Then slice into 1/8-inch slices and put on a plate in a cool place so it doesn't melt.
Stuffed Peppers Instructions
  1. Preheat oven to 375 degrees.
  2. Wash peppers and cut in half lengthwise.
  3. Remove the seeds and dry for planting or discard.
  4. Heat the butter or coconut oil in a large skillet.
  5. Slice the onion and add to skillet.
  6. Sauté about 5-8 minutes until starting to become translucent.
  7. Thinly slice the mushrooms and add to the pan. Sauté another 5-8 minutes.
  8. Slice the roast beef into strips and add to pan. Cook another 2-3 minutes or until hot (assuming the meat is pre-cooked... if not, cook meat first until done).
  9. Place the peppers in a large baking dish, open side up. Spoon the meat/onion/mushroom mixture evenly into the bell peppers. Top each pepper with the cheese and bake for at least 20 minutes or until well cooked. Enjoy!
