  1. 1 apple, cored and thinly sliced
  2. Nut butter
Optional Toppings
  1. Pecans or Walnuts, chopped
  2. Almonds, sliced
  3. Roasted coconut shreds
  4. Dark chocolate chips
  5. Dried cranberries or raisins
Instructions
  1. Spread the almond butter over one side of each apple slice.
  2. Top each apple slice with your choice and amount of toppings.

Cucumber Subs

Ingredients
  1. 2 cucumbers, peeled and sliced lengthwise
  2. deli meat of your choice or mixed deli meats
  3. Toppings (Mix what you want): baby spinach, lettuce, kale, grated carrot, avocado, onion, pepper, tomato, bacon, any kind of healthy veggies, seeds etc...
  4. Dressings (Optional, whatever kind you want): Dijon Mustard, Paleo Mayo, Balsamic Dressing, Hummus etc…
  5. Seasonings (Optional, whatever kind you want): salt, pepper, etc…
Instructions
  1. Peel 2 cucumbers and slice lengthwise, scoop out the inside seeds with a spoon.
  2. Fill each cucumber sub with meats, desired veggies, and dressings you desire.

Instructions
  1. Chop watermelon into 1 inch pieces and put into a large bowl.
  2. Chop fresh herbs. Add to watermelon and mix together.

Mini Cucumber Sandwiches

Mini Cucumber Sandwiches

  1. ½ cucumber, peeled and cut into slices
  2. sea salt and ground pepper, optional to taste
  3. deli meat or pepperoni, thinly sliced (I sometimes add tomato too!)
  4. Toothpicks
Instructions
  1. After peeling and cutting the cucumber into thin slices, fold small pieces of deli meat in between two slices to form a small cucumber sandwich. Sprinkle lightly with sea salt and pepper if desired. Use a toothpick to hold them together if needed.

Kale Chips

Ingredients
  1. 1/2 bunch kale leaves
  2. 1/2 tablespoon extra virgin olive oil or melted coconut oil
  3. 1 teaspoon garlic powder
  4. 3/4 teaspoon chili powder
  5. 1/2 teaspoon onion powder
  6. 1/2 teaspoon paprika
  7. 1/4 teaspoon fine grain sea salt or pink Himalayan sea salt
Other Optional Seasonings
  1. 1.5 tablespoons nutritional yeast seasoning or flakes (Not baking yeast!) Adds a cheesy taste!
  2. 1/8 teaspoon cayenne pepper
Instructions
  1. Preheat oven to 300F. Line a large rimmed baking sheet with parchment paper.
  2. Remove leaves from the stems of the kale and roughly tear it up into large pieces.
  3. Wash and let the leaves dry completely, pat dry with paper towels if needed.
  4. Add kale leaves into a large bowl. Massage in the oil until all the nooks and crannies are coated in oil. Now sprinkle on the spices/seasonings and toss to combine.
  5. Spread out the kale onto the prepared baking sheet into a single layer, being sure not to overcrowd the kale.
  6. Bake for 10 minutes, rotate the pan, and bake for another 12-15 minutes more until the kale begins to firm up. The kale will look shrunken, but this is normal. Only bake for 20-25 mins total.
  7. Cool the kale on the sheet for 3 minutes before digging in! This really makes all the difference! Enjoy immediately as they lose their crispness with time.
  8. Repeat this process for the other half of the bunch and store in airtight container.

Ingredients
  1. 2-3 chicken sausage, cooked and chopped
  2. 1 red bell pepper, chopped
  3. ¼ yellow onion, chopped
  4. 8 eggs, whisked
  5. 2 garlic cloves, minced
  6. ¼ teaspoon garlic powder
  7. ⅛ teaspoon red pepper flakes
  8. salt and pepper, to taste
  9. avocado, to garnish
Instructions
  1. Cook sausage until cooked through.
  2. In a large bowl, add sausage, red bell pepper, yellow onion, eggs, garlic cloves, garlic powder, red pepper flakes, and salt and pepper. Whisk until well combined.
  3. Use a ladle to pour mixture into 8-10 muffin tins. (I used a silicone muffin tray and did not have to grease it. If you are using a regular metal pan, thoroughly grease all of it or use muffin liners.
  4. Place in oven and bake for 35-40 minutes or until cooked through.
  5. Garnish with avocado.

Mini Meatloaves

Mini Meatloaves

Ingredients
  1. 2 pounds of Lean ground meat – mixture of grass fed beef and/or pork and/or turkey
  2. 10 ounces frozen, chopped spinach
  3. 1-2 teaspoons oil
  4. 1 medium onion, finely diced
  5. 6 ounces mushrooms, finely diced
  6. 2 carrots, grated or finely diced
  7. 4 eggs, lightly beaten
  8. 1/3 cup coconut flour
  9. 2 teaspoons salt
  10. 2 teaspoons pepper
  11. 2 teaspoons onion powder
  12. 1 teaspoon garlic powder
  13. 1 teaspoon dried thyme
  14. 1/4 teaspoon grated nutmeg
  15. Optional topping - No sugar added marinara sauce, if desired
Instructions
  1. Preheat oven to 375 degrees F
  2. Thaw the spinach, squeeze out the excess water and set aside.
  3. Heat a pan on medium heat, add the oil and fry the onions and mushrooms until the onions are translucent and some of the liquid has cooked out of the mushrooms. Set aside to cool.
  4. Place the ground meat in a large bowl, add the spinach, carrots, mushroom/onion mixture, beaten eggs, coconut flour and all the spices. Use your hands to combine it well but do not overmix.
  5. Fill 18 regular size muffin tins to the top with the meatloaf mixture. (Greasing the tins may be a good idea if the meat you’re using is fairly lean)
  6. Cook for 20-25-30 minutes or until internal temperature reaches 160 degrees.
  7. Allow to cool and use a knife to loosen meatloaves from sides of the pan before removing.
Notes
  1. Leftovers can be frozen

Carrot Banana Muffins

  1. 2 cups almond flour
  2. 2 teaspoons baking soda
  3. 1 teaspoon sea salt
  4. 1 tablespoon cinnamon
  5. 1 cup dates, pitted (you can substitute raisins if dates can’t be found)
  6. 3 medium bananas
  7. 3 large eggs
  8. 1 teaspoon apple cider vinegar
  9. 1/4 cup coconut oil, melted
  10. 11/2 large carrots, shredded (1.5 cups)
  11. 3/4 cup walnuts, (or nuts of choice), finely chopped
  12. paper muffin liners
Instructions
  1. Preheat oven to 350 F.
  2. In a large bowl, combine flour, baking soda, salt and cinnamon.
  3. In a food processor or blender, combine dates, bananas, eggs, vinegar and oil.
  4. Add mixture from food processor to dry mixture in the large bowl and combine thoroughly.
  5. Fold in carrots and nuts.
  6. Spoon mixture into paper lined muffin tins.
  7. Bake at 350 F for 25 minutes.
